Perfect Pancakes

I just had my mother-in-law over for an American Brunch with buttermilk pancakes, eggs, and bacon.  It was her first brunch experience and she loved it (whew!)! 

Its taken me a few tries to make the perfect American fluffy pancakes.  First off, because I couldn’t find the ingredients and second, because I always grew up on the pancake mix from the box and as an adult, still did that.  Since moving here, you can’t really buy Bisquick or Aunt Jemima pancake mix at the store (and if you do at specialized stores, its insanely expensive).  They do have the Dutch pannenkoeken mix but they are thinner, crepe-like pancakes. 

There are stores that offer American products - http://www.jacbostelaar.nl/ in Utrecht and http://americangoodies.nl/ which is an online store.  I still haven’t ordered from American Goodies though so if anyone’s tried it, let me know. 

Unfortunately, I don’t have a picture of my perfect pancakes because we ate them all! 

  • 1.5 cups of whole wheat flour*
  • 1.5 cups of buttermilk*
  • 1 tsp baking powder*
  • 1 tsp baking soda*
  • 2 egg whites
  • 2 tbsp butter

Melt the butter and then let it sit to cool.  Mix all of your dry ingredients in a large mixing bowl.  In a smaller bowl mix the egg whites, karnemelk, and cooled butter.  Then pour the dry igredients with the dry. 

Heat up a griddle or frying pan with some baking butter (Becel keuken light) and pour your pancake mix until it makes a pancake about 3” (7.5cm) in diameter.  Fry for about 90 seconds (when the mix starts to bubble that’s when you can flip) on medium heat and then flip and leave on for another 45-60 seconds. 

Makes about 4 medium sized pancakes - good for 2 people.  Double the recipe for 4 people.   

Add some eggs over easy and bacon and enjoy! 

I’m going to enjoy this beautiful weather (FINALLY!) and head to the gym and go for a long bike ride.

*In the Netherlands (as I’m sure it is in any country) it is difficult to find the ingredients that you are used to because it is a completely different place with different staples in your diet.  Here is where you can find the ingredients that I was searching for in the Netherlands:

  • Whole Wheat Flour - Koopmans Bio Tarwe Bloem.  Alternatively, regular flour is right next to it and called just bloem.  They also have self-rising flour and its called zelfrijzend bakmeel).  You can get it at AH or C1000 in the baking section
  • Buttermilk - Karnemelk.  I didn’t know this and a good friend of mine told me.  When I actually did take the time to pay attention, the package has a cow on it so it would make sense, duh!
  • Baking powder - Dr. Oetker Backin baking powder or bakpoeder - they come in small orange packets of 5 wrapped in plastic in the baking section of any supermarket.
  • Baking soda - this took me forever to find!  You can find it at the Asian supermarket - Toko or they sell them at the American stores/delis but its way more expensive.
