It’s a beautiful Autumn day today here in Holland.  It’s about 57F/14C and I just finished my delicious lunch of a goat cheese, apple, and walnut spinach salad and panini.  I’m trying to eat healthier as of late.  Even though I cook at home all of the time now and cycle a lot, I still need to be careful to make sure that I don’t use too much oil or sodium (i.e. soy sauce)...
